Its mountains, its rivers, its gullies, its sandy beaches, many of which overlook the Aegean Sea, contribute to its diversity both geographically and gastronomically.<\/p>\n<p>&nbsp;<\/p>\n<p>Next to these natural beauties, its springs, such as that of Evripou and the thermal baths of Edipsos, give a special character to Evia. Cities with a historical past, such as Chalkida, Eretria, Istria, Kymi and others with natural beauties such as Agia Anna, Limni, Karystos are some of its destinations.<\/p>\n<p>&nbsp;<\/p>\n<p>Cut to the chase&#8230;<\/p>\n<p>&nbsp;<\/p>\n<p>Starting with olive oil, which is the basis of the diet of the inhabitants of Evia, it is distinguished for its purity, its special taste and its great nutritional value. A large number of table olives are harvested in the region, with the award-winning &#8216;Rovion canned olives&#8217;, which have been recognised as a PDO (protection of designation of origin) product and are produced by the Rovion Agricultural Cooperative in North Evia in an olive grove with a history dating back to 1920, holding a prominent place.<\/p>\n<p>&nbsp;<\/p>\n<p>In such a paradise of biodiversity, honey could not be missing, monovarietal blends and compositions that reflect the seasonally rich areas all over the island fill the palate with tasty melodies of the Euboean land. There is intense wine activity with large and small wine production units, many of which can be visited. Noteworthy is the production of tsipouro in many villages of the prefecture, as well as the local ouzo and beer production units.<\/p>\n<p>&nbsp;<\/p>\n<p>A different superfood with history, the sun-dried figs from the area of Kymi and the Agricultural Cooperative in the area of Taxiarchis, which have been recognized as a PDO product, are one of the labels for lovers of the species.<\/p>\n<p>Many aromatic plants and herbs grow in the Euboean land with the most characteristic ones being the mountain tea (siderite of Euboea), oregano, oregano, turmeric, sage, etc., while the systematic cultivation concerns mainly the fennel seed with great gastronomic utilization in combination with olive oil and livestock farming.<\/p>\n<p>A type of traditional bean, chamofasoula is delicious and you will find it in the Mandoudi area (producer&#8217;s recipe). Known throughout Greece and abroad, they are rich in vitamins and are recognized for their positive properties for the body. In many places on the island you will find traders who sell them by the kilo among other local legumes (chamofasula, lentils, fava beans of Mantoudiou, etc.).<\/p>\n<p>The traditional pasta of the island, such as the &#8220;kurkubines&#8221; (a great recipe from the Anthology of recipes of Karystos) made one by one on the rolling pin, come in turn to fill our dish with nostalgic aromas!<\/p>\n<p>&nbsp;<\/p>\n<p>Going more seriously into the kitchen now, its livestock production also does not envy the rest of the country. It includes the breeding of sheep, goats, pigs and poultry that harmoniously combine seafood with mountain airs (goat of Karystos, trahanas with smoked pork, etc.) in this wonderful environment &#8220;give&#8221; a palette of cheese products that are tasty treasures of high nutritional value with feta cheese from Karystos and Mistros standing out. Fishery products such as fish, shellfish, molluscs, etc. can be found in almost all coastal areas of the islands. Typical examples are the lobster of Skyros, the bream in the wider area of Kymi and the Aegean sea bream.
