Continuing our wanderings in the Greek vineyard, we stop in Central Greece. Nearby destinations include Attica, Evia and Boeotia, which produce about 1/3 of Greek wines. Savatiano is the dominant variety while in recent years Assyrtiko Syrah and Cabernet Sauvignon have been planted. Popular since antiquity is Retsina, which is the white, dry resinated wine produced from Savvatiano. The resin is a wine preservative, but it also gives the wine its corresponding organoleptic characteristics. Sterea Greece has the most PTE (local) wines (protected local indication) of all the regions of Greece. Retsina may bear the title of Wine of Designation by Tradition with geographical origin, in which case it is classified as a PGI wine (Retsina of Attica, Messogeion, Koropi, Markopoulou, Megaron, Peania, Pallini, Pikermio, Spata, Boeotia, Thebes, Euboea, Chalkida, Yaltra, Karystos).
